

Julien Wauthier, Belgian starred chef and former candidate for Top Chef 2017, took over the historic establishment Les Tilleuls 1738 in January 2025, in the heart of Étretat. This house, steeped in history and deeply anchored in the Etretat landscape, begins a new chapter driven by the vision of a chef recognized for the precision of his cuisine and his sincere attachment to quality products.
Driven by a taste for sharing and a demanding approach to gastronomy, Julien Wauthier now puts his know-how at the service of the region's gourmets. He imagines a delicate and generous cuisine, inspired by the great culinary traditions, where each recipe is designed to reveal the very essence of the ingredients. The dishes are simmered for a long time in casseroles, allowing the flavours to fully develop and the textures to become melting and harmonious.
Through this concept, the chef's cuisine is both refined and accessible.
